Millet is rich in niacin, is low in simple carbohydrates, and higher in complex carbohydrates, making it a low-glycemic index (GI) food. This means that millet takes longer to digest than standard wheat flour, helping you keep your blood sugars from spiking after eating, allowing those who have diabetes to manage their blood sugars better.
