July is National Picnic Month and Chef Richard has created the perfect picnic recipes.
Q: Why this particular salad?
We serve this salad quite often at the Health Retreat, and it is both a crowd and staff favorite. The creamy ranch dressing provides a delectable flavor and richness, while the chopped raw veggies and gluten-free rice pasta keep this salad light, fresh and nutritious. It’s a fantastic addition to a picnic as a side dish, or the main star.
Q: Did you choose melons because of their water content?
Melons do have a ton of water, making them extremely refreshing on a hot summer day. Staying hydrated is so important all year round, but especially during the summer months when many of us are outside more and being more active.
Q: What do the mint, tarragon and lime do for the flavor?
I love a plate of fresh cut melon just on its own, but in this salad the mint, tarragon and lime are a nice complement, providing some new flavor profiles that you may not have experienced before. You can also experiment with the amounts of each of these.
Q: Describe the taste of this tea.
If you’re not familiar with the flavor of ginger, you should really try it rather than have someone describe it to you, and this beverage is the perfect opportunity. This iced tea has wonderful floral and herbaceous notes from the mint and green tea, and with a nice kick from the ginger. The sweetness from the honey, and zing of tartness from the lemon, round out the flavor, giving you a deliciously balanced drink.
Q: Why is this tea especially healthy?
Both ginger and mint have been proven to have many medicinal properties, such as relieving nausea and other stomach ailments, helping with inflammation, as well as combatting depression and fatigue.
