A Hearty Vegan Recipe for Dinner: Veggie Chili Topped With Cashew Sour Cream

What’s more nourishing, warming and comforting than a bowl of chili on a nippy fall day (preferably under a fleece blanket surrounded by your loved ones)?

I love one-pot dishes when cooking for a large crowd, and this veggie chili is definitely one of my favorites. Chili is such a classic comfort food, and this recipe is a perfect example that removing the meat does not mean compromising on flavor!

Q: When do you enjoy eating this veggie chili?

One of the things I love most about veggie chili is that it’s great any time of year. Of course a hot bowl of chili will warm your bones in the winter, but it’s also perfect for summertime cookouts and barbeques. A big pot of this chili is a delicious way to make some wonderful memories with your family and friends.

Q: How can you customize this dish to satisfy your palate?

Another thing I love about this recipe is that you can adjust the seasonings to suit your own tastes. When I make mine, it’s smoky (chipotle and smoked paprika), a little spicy (poblanos and chipotle) and slightly sweet (honey and sweet corn). Then, I top it with some of my favorite non-dairy cheese shreds or a little bit of homemade cashew sour cream.The cool thing about adding cashew sour cream is that studies have shown eating cooked tomatoes with a small amount of fat actually helps our bodies absorb the super-beneficial lycopene in the tomatoes. Cashews are full of healthy fats, which makes our cashew sour cream a great companion to the veggie chili.

Q: What are some side dishes you would recommend with this meal?

My absolute favorite sidekick for this veggie chili is jalapeño cornbread muffins. I served this dynamic duo together at the HD Health Retreat, and everyone is always asking to pass that muffin basket back over!

      They are currently working on the printing issues, but in the meantime, you can right click the recipe and “copy image.” Then paste that to a word document and print.

      Evidently someone has put the wrong link in somewhere, or it is some sort of false claim, because Hallelujah Diet is not offering cash and does not know what this is about.
