Finally, a vegan cream cheese recipe! Create this delicious spread by following the instructions below. This cream cheese pairs perfectly with fresh fruit for a light breakfast or sweet evening snack. You can keep some on hand to try in other recipes too!

Ingredients

1 cup macadamia nuts, soaked 5 to 7 hours, rinsed and drained
1 cup pine nuts, soaked 2 to 3 hours, rinsed and drained
¼ cup fresh lemon juice
2 teaspoons Agave Nectar, or maple syrup, or brown rice syrup
1 teaspoon Celtic Sea Salt
Just enough distilled water to blend

Directions

1. Pace nuts, lemon juice and sweetener in Vita Mix or other blender, and turn on machine.
2. Slowly add distilled water and blend to a creamy consistency.
3. Add more lemon juice, if you prefer a tarter flavor.
4. ENJOY!
