Tomato Summer Squash Soup
A scrumptious soup recipe by Kim Wilson in Everyday Wholesome Soup recipe book
- Chop onion (we like large chunks for this soup)
- Sauté in oil/butter until tender
- Add cut squash and water, bring to a boil
- Reduce heat and simmer until squash is tender
- Add tomatoes, salt and cayenne
- Simmer for a few more minutes
- Enjoy the soup and refrigerate leftovers if there are any.
With all the fresh vegetables coming into season, I can’t wait to try this soup!
