When making this salad, I try to just make just enough dressing for the amount of zucchini “noodles” I sprialize. Because the dressing has avocado, which oxidizes very easily, it may only stay fresh in the fridge for a couple of days.

  1. Blend all dressing ingredients in a small blender or food processor until smooth.
  2. In a mixing bowl, spoon dressing over the rest of the salad ingredients.
  3. Toss gently, until all of the salad is coated with dressing.
  4. Serve garnished with extra chopped cilantro, basil, and almonds.
