Raw Butternut Squash Soup

Butternut squash is mild in flavor. The addition of spices, onion, lemon juice and a touch of salt, make a delightfully pleasant, nutritious raw meal.

Ingredients

1 cup chopped butternut squash
1/3 cup pecans
2 tsp. cinnamon powder
¼ tsp turmeric powder
1 Tbsp. raw onion (just a small amount; when onion is blended it can get bold)
2 tsp. fresh lemon juice
Sprinkle of salt (approximately 1/32 of a tsp. or to taste)
1 cup water, or a little more for desired consistency

Directions

1. Cut open a butternut squash and remove seeds and peeling. A

carrot/vegetable peeler works well. Hallelujah Diet carries an effective vegetable peeler if your current one has become dull.
2. Cut squash into small pieces to measure 1 cup.
3. Add squash and all other ingredients to a blender, and blend until smooth.
4. Enjoy as a bowl of soup or drink like a savory smoothie.
