Butternut squash is mild in flavor. The addition of spices, onion, lemon juice and a touch of salt, make a delightfully pleasant, nutritious raw meal.

  1. Cut open a butternut squash and remove seeds and peeling. A carrot/vegetable peeler works well. Hallelujah Diet carries an effective vegetable peeler if your current one has become dull.
  2. Cut squash into small pieces to measure 1 cup.
  3. Add squash and all other ingredients to a blender, and blend until smooth.
  4. Enjoy as a bowl of soup or drink like a savory smoothie.
