Mint is fun to grow along your sidewalk. It comes back year after year and taste invigorating in smoothies, salads and these nut balls. This recipe is from How We All Went Raw, Raw Food Recipe book by The Top Raw Men.

Makes 4 dozen thin patties

  1. In a Food Processor, such as the Kitchen Aid, with the S blade, place in the listed ingredients to process them together
  2. Process several minutes until ingredients form a dough ball.
  3. Roll into small balls with your hands and flatten into a patty. Choose the thickness that appeals best to you.

    After trying several raw desserts, I will go no further! This beats them all! With that said, I have three suggestions: Run the pecans and dates through your Green Star Juicer with the blank attachment for a super smooth consistency; substitute mint extract for the leaves; and freeze the patties overnight for a nicely chilled dessert!

    The first time I tried these, I used a food processor with mint leaves. The consistency was not very smooth and it tasted like I was eating mint leaves. It was still really good, but the suggestions do make it a little better. I wonder if running the mint leaves through the juicer would make them not as strong? The extract does make the balls oily, but once frozen, it doesn’t matter.
