Recipe Type: Sesame Pickled Cucumber

1 large English cucumber, peeled and sliced into thin half-moons 3 T. rice vinegar 1 T. Ume plum vinegar (optional) 1-2 T. agave nectar ¼ tsp. sea salt, or to taste 1-2 T. toasted black sesame seeds Toss all ingredients in a mixing bowl, and let marinate for at least 30 min. Drain off excess liquid, and serve. *I like to save the excess liquid and use it to make a salad dressing.
