This brown-bagger recipe was sent in by Judy, who writes: "Hi George, You asked for some simple vegan lunch ideas. I have one from your site a year or two ago that I have used over and over. It really has changed my life. Don't know who donated it to your site, but here it is: In a small food chopper, first put in some walnuts or almonds and process them for a few seconds. Then I put pieces of fresh washed carrot, cucumber, or any other fresh veggies I have on hand and process them for a minute or so. This makes a very nice sandwich spread. It is so moist that I don't even need any dressing. Sometimes I add herbs or spices for extra flavor, but it really is very tasty all by itself. You can put any combination of vegetables together and have a healthy sandwich in no time, and what a time saver. Use a good organic, whole grain bread, bagel, or pita, to put your sandwich filling in."

Walnuts or Almonds

cucumber
herbs of choice

Directions
