For the past almost two months, in this section of our Health Tip we have been featuring new vegan recipes for bread machines sent in by our readers. This week's bread machine recipe was sent in by Joan Gertz, who lives in Kentucky. Joan writes: "Dear Dr. Malkmus, here is our fun vegan, favorite bread machine recipe, one which we have modified over the years. The recipe makes a light, delicious, nutritious, two pound loaf of bread."

Ingredients:

1 1/2 cups very warm water

4 1/2 cups freshly ground whole-wheat flour

1 tablespoon oil

1 tablespoon honey

1 teaspoon Celtic sea salt

1 3/4 teaspoons yeast

1 1/2 teaspoons gluten flour

Directions:

"Place all ingredients in machine, and set machine for whole wheat cycle." ENJOY!
