Rhonda, at her Culinary Academy class prepared and served the following recipe in recognition of Valentines Day. From Rhonda's Culinary Creations Recipe book.

Hallelujah Diet Sweetheart Cake (Serves 10-12)

Rhonda drizzled over this frozen Sweetheart Cake, chocolate syrup she had made using carob. Most of those who tasted it thought it was the real thing.  Click on the recipe name to find the recipe for Not Your Mother's Chocolate Sauce.

Directions for Making Sweetheart Cake

We recommend using a heart-shaped cake pan, but you can use a regular bundt pan if you don't have a heart shape or try to cut the shape yourself!

Ingredients

1 Heart Shaped Cake Pan (use regular bunt pan if Heart Shape not available)
32 ounces frozen Raspberries OR frozen Strawberries
2 cups Almonds (slivered)
10-12 ripe Bananas (peeled)

Directions

1. Puree bananas in Blender or Food Processor using S blade
2. Swirl raspberries (or strawberries) into the pureed bananas
3. Place half of the almonds in bottom of cake pan and top with banana/raspberry mix.
4. Top with remaining slivered almonds, cover with plastic wrap and freeze overnight.
5. To serve, remove cake from freezer, turn upside down and run hot water over pan until cake releases.
6. Cut and serve immediately, storing any leftovers in freezer.
7. ENJOY!
