Stuffed Cucumbers

Ingredients:
Cucumbers
Salad greens
Any of the following:
1 - 2 Tbsp celery, chopped fine
1 - 2 Tbsp carrot, grated
2 Tbsp tomato, chopped into small pieces
1 - 2 Tbsp raw almond butter

Directions:
  1. Wash cucumbers thoroughly and peel
  2. Cut cucumbers in half lengthwise, carefully remove the seeds
  3. Chop cucumber hearts together with any of the ingredients listed above
  4. Place cucumbers on top of  a bed of salad greens
  5. Mix in enough nut butter to hold it together and fill the cucumber halves. 
  6. Note: You may change the “stuffing” by simply adding your favorite veggies or by adding herbs such as 1 Tbsp minced parsley.
