This recipe comes from Hallelujah! Simple Weekly Meal Plans - Volume 1. This salad is so easy to make and is often referred to as a favorite! Plus - it can even improve your mood! Strawberries stimulate the release of serotonin, which helps to lift your mood and promote relaxation!

Ingredients

1 package organic baby spinach (5 ounce)
1 pint organic strawberries (hulled)
1 small sweet purple onion (thinly sliced)
2 Tbsp sesame seeds (lightly toasted)
3/4 cup Vegenaise (purple label)
1/4 cup sweetener (raw honey, or agave nectar, or maple syrup)
1 Tbsp lemon juice (freshly squeezed)
2 Tbsp almond or rice milk

Directions

1. Toss all the salad ingredients together in a large bowl or on a large platter.
2. Mix dressing and serve on the side.
Whole-food meal with leafy greens, beans, grains, berries, avocado, seeds, and vegetables being prepared in a sunlit kitchen.
