Gazpacho Stew

Gazpacho Stew

From How We All Went Raw by Charles, Coralanne, and George Nungesser.

TOP HAT TIP: In the U.S. several foods (including canola, corn, flax, and soy beans) are genetically modified to withstand heavy chemical spraying to kill weeds and then sold without labeling. Organic food does not have toxic chemicals.

1 medium cucumber, peeled and chopped
1 medium zucchini, peeled and chopped
1 large green bell pepper, chopped
½ (one-half) cup red onion, diced
½ (one-half) cup fresh cilantro leaves, chopped

2 tablespoons raw apple cider vinegar
4 tablespoons extra virgin cold-pressed olive oil
2 cloves garlic, minced
1 Fresno pepper (red Jalapeno), minced
1 cup fresh cut corn
2 teaspoons ground cumin
2 teaspoons fresh lime juice
