Salad with Apple, Pecans, and Greens (Serves 2)

From our recipe book, Rhonda's Culinary Creations by Rhonda Malkmus, we have a simple, healthy salad that works well year-round. This is a basic meal option that works well as a light lunch or in a smaller portion as a side with dinner.

We always use fresh ingredients, and this recipe makes it easy to do any substitutions with whatever you have on hand! Any salad greens will work for the base. Golden Delicious apples are my go-to, but you could use Granny Smith for a crisp bite with more of a citrus-y tart flavor if you prefer. Chopped pecans pair well with apples, but you could also use walnuts or even almonds if you're running low on nut choices.

You also have the option of adding something seasonal in, which makes this easy salad a great recipe for any time of year. A small handful of raisins adds a touch of sweet, chewy goodness! When the weather starts to turn and temperatures start to drop, you may find your recipes start to transition as well. This time of year it might be easier to change up this meal staple by adding some dried cranberries instead. Go with whatever you have on hand and this salad is sure to stay in rotation all year long!

Fresh Ingredients

We prefer baby salad greens, but baby spinach works well too. I typically use two Golden Delicious apples, cored, peeled, and chopped. Peeling by hand can take time (and to be honest this can be left up to your personal preference) but you can also use a coring machine that peels at the same time if you have one! Pecans can often be purchased halved, or chopped if you prefer, but if you have whole pecans, it is best to cut them and any other toppings you plan to use into smaller pieces for this salad.

To make the dressing, you can use a small mixing bowl to whisk by hand and combine the two ingredients, or use a salad dressing shaker if you have one! For best results, use a fresh orange, halved, and a citrus juicer to squeeze the juice from both halves into your mixing container, then add 1 Tbsp extra virgin olive oil and combine.

Follow the Recipe

Start by making the easy two-ingredient dressing, then set it aside to rest while you plate your salads. Place your greens into two salad bowls. Add apple pieces, pecans or walnuts, and any other optional toppings. Pour dressing over both salads evenly. Serve and enjoy!

    Ingredients

    2 Golden Delicious apples, peeled and diced
    ¼ cup pecans, halved
    1 handful of salad greens or baby spinach
    Juice of 1 orange
    1 tablespoon extra virgin olive oil
    Optional:
    1 celery rib, diced
    1 small handful of raisins or dried cranberries

    Directions

    1. Place orange juice and olive oil in a small bowl with a tight-fitting lid and shake to mix well or use a wire whisk to combine.
    2. Place greens in salad bowls.
    3. Add apple pieces, pecans, and any other optional toppings.
    4. Pour dressing over both salads evenly.
