Gluten-Free Zucchini Bread

- Mix dry ingredients – set aside.
- Combine wet ingredients in a separate bowl.
- Mix the wet and dry ingredients together.
- Fold in nuts and raisins (if including).
- Pour into an oiled loaf pan and bake at 350 degrees for at least 1 hour. (Test with a toothpick or knife).
- Allow to cool for at least 20 minutes before slicing. Great toasted!
