Gluten-Free Zucchini Bread

  1. Mix dry ingredients – set aside.
  2. Combine wet ingredients in a separate bowl.
  3. Mix the wet and dry ingredients together.
  4. Fold in nuts and raisins (if including).
  5. Pour into an oiled loaf pan and bake at 350 degrees for at least 1 hour. (Test with a toothpick or knife).
  6. Allow to cool for at least 20 minutes before slicing. Great toasted!
