- Place the following in a bowl: 2 celery ribs, finely chopped, 4 carrots, finely chopped, ¼ cup onion, minced (optional), 1 ½ cups tomatoes, diced, and ½ red pepper, chopped
- Process the remaining ingredients in a blender: 1 cup distilled water, 1 tsp flax oil, 1 Tbsp. flax seeds, finely ground, 1/8 tsp. unrefined salt, 3 cups spinach, 2 Tbsp. fresh lemon juice, ½ red bell pepper, stem removed, and 1 celery rib, chopped
- Pour blender mixture over chopped vegetables in a large bowl.
- Stir together and serve.
