Fiesta Taco Salad

Everyone especially loves the Avocado Corn Relish in this salad. You get the creamy, healthy fats from Hass avocados that help nourish skin and hair. Who knew Mexican food can be beautifying good?

I recommend serving this dish with organic tortilla chips. You can present it as a dip or simply eat it like a regular salad—either way, you can get your Mexican food fix. You can also substitute the tortilla chips and top the salad with healthy croutons. Feel free to add your favorite raw veggies to it, too!

Vegan Taco Meat:

  1. Pulse in food processor until mixture is crumbly and looks like ground beef.
  2. Remove and serve.

Pico De Gallo:

  1. Combine ingredients in a bowl and stir.
  2. Let sit unrefrigerated for 15 min to allow flavors to meld.
  3. Serve.

Avocado Corn Relish:

  1. Combine ingredients in a bowl, and stir until everything is mixed together well.
  2. Serve and enjoy.

Cilantro Line Vinaigrette:

  1. Whisk all ingredients in a bowl, and serve.

Chipotle Ranch:

  1. Whisk all ingredients in a bowl, and serve.


  1. Arrange salad bowls by making a bed of shredded romaine lettuce, and then a scoop each of the Taco Meat, Pico, and Avocado Relish on top.
  2. Serve with the two dressings above, and your favorite organic tortilla chips.
