Raw Pea Tip Salad

This recipe was sent in by Sherry, who lives in Ohio. She writes, " In preparation for a recent seminar my husband Tom and I were conducting, I was playing around with some veggies for something different to do with them. I had visited an Asian Market and found 'pea tips' which are actually just young pea plants that have been snipped like sprouts, and this is the recipe I came up with and everyone loved it!" Sherry's Raw Pea Tip Salad is versatile and delicious - enjoy as a vegan raw salad or use as a sandwich filling. However you plan to serve this Raw Pea Tip Salad, you're sure to enjoy. Let's try it raw! 

Ingredients:

1 small Red Onion

1 lb. Fresh Asparagus

2 large Cauliflower florets

2 ears raw Corn

2-3 large handfuls fresh Pea tips

2 medium Tomatoes, diced

Directions:

In food processor, place onion, asparagus and cauliflower florets. Process until chopped small. Place in large bowl. Remove corn from cobs and add to previously processed veggies. Add diced tomatoes and pea tips and toss well. May be eaten with your favorite salad dressing as is or stuffed into pocket bread for a tasty treat with or without dressing. For pocket bread sandwiches, you may add any other ingredients that sound interesting -- such as shredded carrots, avocado slices, hummus, etc. Try stuffing tomatoes or green peppers; roll it inside flat breads or romaine lettuce leaves. The possibilities are many. ENJOY!
