'Summertime, and the living is easy,' so goes the song. I don't know about the 'living is easy' part, but summertime is a wonderful time to enjoy the abundance of fresh raw fruit and vegetable recipes available for salads. This week's recipe was sent in by Metaxia, who wrote: "As soon as I started The Hallelujah Diet, which was about 3-years ago, I started making a 'Greek Raw Vegan Salad' that I have been eating for lunch ever since! I just can't get enough of it. To make it, all you need is:

Ingredients

1-2 Tomatoes (especially yummy when right out of the garden)

1/2 a Cucumber

Extra Virgin Olive Oil

Celtic Sea Salt (to taste)

Oregano (fresh is best, but dried if fresh not available)

(Feel free to add red and green peppers, sweet onion and olives)

Directions

Cut up the tomatoes and cucumber. Put them in a salad bowl and sprinkle on the oregano and salt. Add olive oil and that's it - a Greek Salad. I take it to work every day for my lunch. Hope you enjoy this recipe." ENJOY!
