Ingredients:
8 oz dry Great Northern Beans (or other beans of your choice)
2 cans tomato paste (8 oz cans)
2 medium potatoes, diced
2 medium carrots, shredded
2 small onions, diced
4 cups distilled or purified water, or vegetable broth

 

Directions:
  1. Wash beans and soak overnight in enough water to cover. Drain beans in morning. 
  2. Put soaked beans in crock pot. Add all other ingredients, stir, and cook on low for 6 hours or until ready to serve (if cooking longer than 6 hours, check periodically to ensure there is enough liquid in the pot).
