Beth's Black Bean Salad is one of the best raw food recipes for beginners. Packed with nutrients it's easy to prepare and super delicious - a great way to start eating raw vegan.

Beth writes: "We think this recipe is delicious! My husband and I just began The Hallelujah Diet on June 30th of this year. The fact that my husband would agree to do this is a definite answer to prayer. He was diagnosed 'diabetic' a year ago. His father and all 8 of his father's brothers and sisters are diabetic. After less than a month on The Hallelujah Diet, my husband is seeing a reduction in his blood glucose readings. We are so excited!" 

BLACK BEAN SALAD

Ingredients

6 cups Romaine Lettuce (torn into pieces)

1 can (15oz) Organic Black Beans (rinsed and drained)

1 cup Tomatoes (seeded and chopped)

1 cup Green (or red) Peppers (chopped)

1/2 cup Sweet Red Onion (sliced)

LIME VINAIGRETTE DRESSING

1/4 cup Cilantro (fresh & minced)

1/4 cup Tomatoes (seeded and chopped)

1 tablespoon Organic Apple Cider Vinegar

1 tablespoon Extra Virgin Olive Oil

1 tablespoon Lime Juice

1/2 teaspoon Lime Peel (grated)

1 Garlic Clove (minced)

1/4 teaspoon Celtic Sea Salt

1/4 teaspoon Chili Powder (or to taste)

Directions

Combine the lettuce, beans, tomatoes, pepper and onion in a large serving bowl. Combine the Vinaigrette ingredients in a blender or food processor until smooth. Pour dressing over salad and toss to coat. ENJOY!
