Simple Key-Lime Pie

  • Serves 8

From Rhonda Malkmus’ new recipe book, “Rhonda’s Culinary Creations”

To make the filling:

  1. Add all the ingredients in a Vitamix or other powerful blender and blend until creamy. Avocado will turn brown quicker if you over blend so be sure to blend just enough till smooth.

To serve:

  1. Top each slice with a little shredded coconut and thin slices of lime.

    YUMMY! I just made it as a ‘pudding’ without the crust, and it was oh soooo good! 5 stars!

    It is real good! I used Lohan for the sweetner.
    I found with this receipe and others that they say to put in Vitamix, which I have. The filling is thick and was not blending real well, so I put all ingredients in food processor. This works better and easier to get all the contents out. I also blended all ingredients except avocado, then blended it in last so does not turn brown.
