This recipe is the one that was served to Health Ministers on Friday evening at the Health Ministers Reunion. The recipe is taken from the recipe book "How We All Went RAW" by Charles Nungesser and Stephen Malachi. It's the perfect solution to a summer vegan dinner, refreshing and nourishing! Our Raw Spaghetti embraces the goodness of fresh, raw fruits and vegetables to create a delicious and vibrant dish. Let's get started on this wonderful vegan meal.

THE PASTA – In a bowl, place the following ingredients:

Ingredients:

2 large Zucchini (peeled & course grated or sliced in a food processor)

1/2 cup chopped mushrooms (use your favorite)

6 Italian Olives (pitted and halved)

THE SAUCE – In a blender, place the following ingredients:

2 cloves Garlic

2 vine ripened Tomatoes

1/2 cup Sun Dried Tomatoes

2 tablespoons Extra Virgin Olive Oil

1/4 cup fresh Basil

1/4 cup fresh Oregano

1 teaspoon Celtic Sea Salt (Or to taste)

Directions:

Blend well and pour THE SAUCE over THE PASTA (Zucchini) ENJOY!
