Kathi's Spiced Sweet Potato Terrine

With Thanksgiving and Christmas only a few weeks away, I requested last week that our readers send in what vegan food they like for their favorite Holiday Recipes. In response, Health Minister Kathi Wormald sent in the following: "You guys are the best! Hope to make your next Health Minister's Reunion. One of my favorite cooked holiday recipes for vegans that I always take to parties with me, along side a salad, is this Spiced Sweet Potato Terrine. Everyone loves this dish, even kids. Make twice as much as you think you'll need as it goes fast. It is also wonderful the next day after it has been chilled. Even though it's one of my sugar free vegan recipes, it tastes a lot like apple pie. Yummy!"

Ingredients:

2 medium-size sweet potatoes

2 medium-size tart apples (I use Granny Smiths)

1/2 cup apple cider (or apple juice)

1/4 tsp grated fresh ginger

Dash of cinnamon

Directions:

Cut sweet potatoes lengthwise, then cut crosswise into thin slices. Slice apples (I do them about twice the thickness of the potatoes) Place the sweet potato and apple slices in layers (I like to stand them up and alternate them in rows because it looks pretty). Pour cider over the apples and sprinkle with the ginger and cinnamon. In an 8 X 8 pan, bake at 350 degrees for about 45 minutes or until the sweet potatoes are tender. ENJOY!
